Golden Seafood Paella with Dallas Olive Oil

Ingredients:
- 2 cups Arborio or paella rice
- 4 cups seafood broth
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb mussels and clams
- 1/2 cup diced tomatoes
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 tsp saffron threads (soaked in 2 tbsp warm water)
- 1 tsp smoked paprika
- 1/4 cup Dallas Olive Oil (extra virgin)
- 1/2 cup white wine
- 1/2 cup green peas
- Salt and pepper to taste
- Fresh parsley and lemon wedges for garnish
Instructions:
- In a large paella pan, heat Dallas Olive Oil over medium heat. Sauté onion and garlic until fragrant.
- Stir in the tomatoes, paprika, and saffron water, letting the flavors bloom.
- Add the rice and stir to coat with the oil and spices. Pour in the white wine and let it reduce.
- Slowly add the seafood broth, one cup at a time, letting the rice absorb the liquid.
- Arrange the shrimp, mussels, and clams on top, cover, and cook for 10 minutes.
- Drizzle with a bit more Dallas Olive Oil, sprinkle with fresh parsley, and serve with lemon wedges.
