Golden Seafood Paella with Dallas Olive Oil

Ingredients:

  • 2 cups Arborio or paella rice
  • 4 cups seafood broth
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb mussels and clams
  • 1/2 cup diced tomatoes
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 tsp saffron threads (soaked in 2 tbsp warm water)
  • 1 tsp smoked paprika
  • 1/4 cup Dallas Olive Oil (extra virgin)
  • 1/2 cup white wine
  • 1/2 cup green peas
  • Salt and pepper to taste
  • Fresh parsley and lemon wedges for garnish

Instructions:

  1. In a large paella pan, heat Dallas Olive Oil over medium heat. Sauté onion and garlic until fragrant.
  2. Stir in the tomatoes, paprika, and saffron water, letting the flavors bloom.
  3. Add the rice and stir to coat with the oil and spices. Pour in the white wine and let it reduce.
  4. Slowly add the seafood broth, one cup at a time, letting the rice absorb the liquid.
  5. Arrange the shrimp, mussels, and clams on top, cover, and cook for 10 minutes.
  6. Drizzle with a bit more Dallas Olive Oil, sprinkle with fresh parsley, and serve with lemon wedges.
